- 1/2 lb. jumbo pasta shells
- 1/2 lb. mild Italian sausage, casings removed
- 1 lb. lean ground beef
- 3 cloves garlic, crushed
- 1 medium yellow onion, chopped
- 2 Tbsp. olive oil
- 1 pkg. frozen spinach, thawed
- 2 eggs, beaten
- 1/2 c. bread crumbs
- 2 Tbsp. grated Parmesan cheese
- salt and pepper to taste
- 3 c. Italian tomato sauce
- 1 1/2 c. grated Mozzarella cheese
- additional Parmesan cheese (for topping)
- chopped parsley (for garnish)
Directions

1Cook the pasta shells until al dente.

2Drain and rinse with cold water.

3Drain well.

4Saute the sausage and ground beef until crumbly.

5Drain and discard the fat.

6In a large frying pan, saute the garlic and onion in the oil until transparent.

7Add the spinach and cook until the liquid is evaporated.

8Combine the sauteed meat and spinach mixture in a bowl.

9Add the remaining ingredients except the tomato sauce and Mozzarella cheese.

10Mix together very well.

11Place 2 1/2 cups of the tomato sauce into one 10 x 14-inch glass baking dish.

12Fill the shells with the meat mixture; close them and place them seam side down in the sauce.

13Top the shells with the remaining sauce and cover with Mozzarella and additional Parmesan cheese.

14Cover the baking dish with foil and bake at 375° for 30 minutes or until hot throughout and bubbly.

15Uncover the dish and broil a couple of minutes to brown the cheese slightly. Garnish with chopped parsley.
