Stuffed Spinach Pizza

  • 1 loaf (1 lb.) frozen white bread dough
  • 1 1/2 c. chopped plum tomatoes
  • 1/2 lb. bulk Italian sausage, cooked, well drained (optional)
  • 1 tsp. basil
  • 1/4 tsp. each oregano, pepper and salt
  • 2 c. Ricotta cheese
  • 1/2 pkg. (10 oz.) frozen chopped spinach, thawed, squeezed dry
  • 1 c. shredded Mozzarella cheese
  • 1 clove garlic, minced
  • 1/2 c. thick pizza sauce

Directions

    Thaw bread dough and let rise according to package directions. Roll 2/3 down onto 11-inch circle on lightly floured surface.

    Line bottom and sides of greased 9-inch cake pan with dough.

    Place tomatoes and sausage in pan.

    Sprinkle with basil, oregano and pepper.

    Combine Ricotta, spinach, Mozzarella, 3/4 cup Parmesan, garlic and salt; spread over tomatoes.

    Roll remaining dough into 9-inch circle.

    Place over cheese mixture.

    Pinch edges to seal. Bake at 450° for 25 minutes.

    Spread with pizza sauce.

    Sprinkle with remaining Parmesan cheese.
