- 3 yellow squash
- 2 small zucchini
- 4 slices bacon
- 3/4 c. bread crumbs
- 1 egg
- 1 Tbsp. Parmesan cheese
- 1/2 c. grated Mozzarella cheese
- 1/2 c. diced onion
- 1/2 c. green pepper, chopped
- salt and pepper
Directions

1Halve squash and cook in microwave 5 minutes.

2Scrape out squash.

3Saute onion, green pepper and bacon.

4Drain off grease. Add tomato, zucchini and microwave 5 minutes.

5Add bread crumbs, egg (beaten), salt, pepper and cheese.

6Fill squash shells and sprinkle with Parmesan cheese.

7Cook 10 to 15 minutes in 350° oven.
