Stuffed Squash

Ingredients

  • 3 yellow squash
  • 2 small zucchini
  • 4 slices bacon
  • 3/4 c. bread crumbs
  • 1 egg
  • 1 Tbsp. Parmesan cheese
  • 1/2 c. grated Mozzarella cheese
  • 1/2 c. diced onion
  • 1/2 c. green pepper, chopped
  • salt and pepper

    Halve squash and cook in microwave 5 minutes.

    Scrape out squash.

    Saute onion, green pepper and bacon.

    Drain off grease. Add tomato, zucchini and microwave 5 minutes.

    Add bread crumbs, egg (beaten), salt, pepper and cheese.

    Fill squash shells and sprinkle with Parmesan cheese.

    Cook 10 to 15 minutes in 350° oven.
