- 4 medium-sized yellow squash
- 2 Tbsp. butter or margarine
- 1/2 tsp. salt
- dash of pepper
- 1/2 c. dry bread crumbs
- 1/4 c. grated Parmesan cheese
Directions

1Pierce each squash once or twice with a fork and place in 8-inch glass baking dish.

2Cover with plastic wrap.

3Microwave on High 6 to 8 minutes.

4Let stand 1 or 2 minutes.

5Cut in half lengthwise.

6Scoop out center of squash.

7Set pulp aside, leaving squash shells in glass dish.

8Place butter in a glass bowl. Microwave at High 30 seconds to melt.

9Stir in squash pulp, salt, pepper, bread crumbs and grated cheese.

10Fill squash shells with stuffing mixture.

11Microwave at High 2 to 3 minutes.
