Stuffed Squash

Ingredients

  • 4 yellow squash
  • 2 Tbsp. butter
  • 3/4 tsp. salt
  • 1 Tbsp. sugar
  • 1 Tbsp. grated onion
  • 2 hard-cooked eggs
  • 1/2 c. cracker meal
  • 1/2 stick butter

Directions

    Put squash in water to cover and boil until nearly tender. Split in half. Scoop out center.

    Mix all the ingredients except butter.

    You may have to use more bread crumbs. Put mixture in squash shells.

    Put buttered crumbs on top. Bake at 350° for 40 minutes.
