- 8 medium tomatoes
- 1 medium onion, finely chopped
- 3/4 c. bread crumbs
- 3/4 c. grated hard cheese (cheddar)
- 3 tbsp. parsley
- 1 1/2 tbsp. chives
- olive oil
Directions

1Cut tops off tomatoes. With a teaspoon, carefully hollow out the tomatoes.

2Add the olive oil to a frying pan; fry onion, breadcrumbs, parsley and chives.

3Add cheese near the end to melt. With a teaspoon, place stuffing in the hollowed-out tomatoes.

4Bake for 10 minutes at 400 degrees.
