- 1/4 c. chopped onion
- 3/4 c. chopped celery
- 1/4 c. butter or margarine
- 3 c. prepared stuffing mix
- 2 eggs, lightly beaten
- 1/2 c. water
- 2 lb. ground turkey
- 1/2 c. tomato juice
Directions

1Preheat oven to 350°.

2In a medium skillet, saute onion and celery in butter or margarine until translucent.

3In a medium bowl, combine onion, celery, stuffing mix, eggs and water; mix well.

4In a large bowl, combine ground turkey, plus half the stuffing mixture, mixed well.

5Pat out half the turkey stuffing mixture in 4 1/2 x 8 1/2 x 3-inch loaf pan.

6Spoon remaining stuffing over turkey mixture.

7Pour tomato juice on top.

8Bake for 1 1/2 hours, until turkey is no longer pink.

9Makes 8 to 10 servings.
