Stuffed Zucchini

  • 3 zucchini (medium)
  • 3 Tbsp. minced onion
  • 3 Tbsp. butter
  • salt and pepper
  • 1 c. soft bread crumbs
  • 1/2 c. cooked tomato

Directions

    Cook zucchini (whole) in boiling salted water for 10 minutes. Cut in halves and scoop out centers.

    Mix pulp with remaining ingredients.

    Fill zucchini.

    Bake at 350° for 15 minutes. Garnish with crisp bacon.
