  • 1 Tbsp. olive oil
  • 1 medium onion, chopped
  • 1 tsp. garlic, minced
  • 3 c. diced zucchini
  • 12 oz. low-fat cottage cheese
  • 6 oz. reduced fat Cheddar cheese, grated
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 tsp. dried basil, crushed
  • 1/2 tsp. dried oregano
  • 8 oz. can tomato sauce
  • 14 oz. can Italian tomatoes
  • 1/2 c. Parmesan cheese

Directions
