- 1/2 c. butter or margarine
- 1 c. carrots, cut into 1 1/2-inch strips
- 1 c. chopped onions
- 1 clove garlic, minced
- 1 can (8 oz.) tomatoes, drained and chopped
- 1/4 c. chopped parsley
- 1 pkg. (14 oz.) herb seasoned cube stuffing
- 1 can chicken broth
- 1 soup can water
Directions

1In 4-quart saucepan, in hot butter, cook carrots and onions with garlic until carrots are tender.

2Add remaining ingredients. Toss to mix well.

3Spoon into buttered 12 x 8-inch baking dish. Cover; bake at 375° for 30 minutes or until hot.

4Garnish with parsley.
