  • 2 c. raisins
  • 2 c. water
  • 1 c. plum or prune baby food or 1 c. unsweetened applesauce
  • 2 eggs
  • 2 tsp. liquid sweetener
  • 3/4 c. cooking oil
  • 2 c. self-rising flour
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. vanilla
  • 1/2 tsp. soda
  • 1/2 c. chopped nuts

Directions

    Cook raisins in water until dry.

    Mix all ingredients well. Bake in a 9 x 13-inch pan, greased and floured (or Bundt pan) at 350° for 55 to 60 minutes or until cake pulls away from sides of pan.
