Ingredients
- 1 cup sugar
- 1/4 cup plus 2 Tb. corn starch
- 2 1/4 cup milk
- 1 dash salt
- 1/2 cup butter (1 stick)
- 1/2 tsp cinnamon
- 1 tsp vanilla extract ( I use double strength from Penzey's) I would also use extra if using single strength.
- 1 baked pie shell
Directions

1In a saucepan, combine the sugar and corn starch.

2Heat over low and stir in the milk, butter and salt.

3Continue cooking over low heat, stirring constantly, until thickened.

4This takes up to 20 minutes, but it's worth it.

5Stir in the vanilla and cinnamon..

6Pour into baked pie shell.

7Sprinkle more cinnamon over the top if desired.

8Cool at least 2 hours in the fridge before serving.
