  • 1 can (15 oz.) chickpeas (garbanzo beans), drained, rinsed
  • 1 small jicama, peeled, cut into 1/2-inch cubes
  • 3 green onions, sliced
  • 1/4 cup KRAFT Zesty Italian Dressing
  • 1 Tbsp. fruit seasoning with lime Target 1 lb For $2.99 thru 02/06
  • 2-1/4 lb. seedless watermelon, rind removed and fruit cut into wedges, divided
  • 1 large cucumber, thinly sliced
  • 2 large tomatoes, thinly sliced King Sooper's 1 lb For $0.99 thru 02/09
  • 2 Tbsp. KRAFT Grated Parmesan Cheese

Directions

    Combine chickpeas, jicama and onions in medium bowl; set aside.

    Pour dressing into blender.

    Add fruit seasoning and 1/2 cup of the watermelon; blend 1 min.

    or until smooth.

    Add to chickpea mixture; toss to coat.

    Arrange remaining watermelon wedges on serving platter along with the cucumbers and tomatoes.

    Top with the chickpea mixture; sprinkle with cheese.

    Serve immediately.
