Summer Chili

Ingredients
- 2 Tbsp. olive oil
- 1 or 2 skinless, boneless chicken breasts
- 2 small zucchini
- 1 large onion
- 1 clove garlic
- 1 can kidney beans or whole kernel corn (both if you like)
- 1 tsp. salt
- 1 Tbsp. chili powder
- 1/4 tsp. hot pepper (optional)
- 1 can tomatoes (16 oz.) or 4 fresh ones, peeled and chopped
Directions

1Cut chicken into bite size pieces; brown in olive oil.

2Slice zucchini and chop onion and garlic and add to chicken.

3Cook 3 to 5 minutes and add kidney beans, tomatoes and seasonings and cook 30 minutes.

4You may add any summer vegetables you like.

5I like to triple the recipe and freeze part of it.
