Summer Chili

Ingredients

  • 2 Tbsp. olive oil
  • 1 or 2 skinless, boneless chicken breasts
  • 2 small zucchini
  • 1 large onion
  • 1 clove garlic
  • 1 can kidney beans or whole kernel corn (both if you like)
  • 1 tsp. salt
  • 1 Tbsp. chili powder
  • 1/4 tsp. hot pepper (optional)
  • 1 can tomatoes (16 oz.) or 4 fresh ones, peeled and chopped

Directions

    Cut chicken into bite size pieces; brown in olive oil.

    Slice zucchini and chop onion and garlic and add to chicken.
  3. 3
    Cook 3 to 5 minutes and add kidney beans, tomatoes and seasonings and cook 30 minutes.

    You may add any summer vegetables you like.

    I like to triple the recipe and freeze part of it.
