  • 1/2 pounds Pasta, Such As Penne Or Farfalle
  • 2 whole Tomatoes (or The Equivalent Amount Of Cherry Tomatoes), Chopped
  • 2 whole Green Onions, White And Light Green Parts Sliced
  • 1/2 whole Yellow Bell Pepper, Chopped
  • 1/2 teaspoons Salt, Or To Taste
  • 1/4 teaspoons Freshly Ground Black Pepper, Or To Taste
  • 1/4 cups Extra Virgin Olive Oil
  • 1/2 pounds Fresh Mozzarella, Cubed
  • 2 sprigs Fresh Basil, Julienned

Directions

    Start a pot of water boiling for the pasta.

    In a large bowl, combine the tomatoes (and their juice), green onions, yellow pepper, salt and pepper to taste, and olive oil.

    (If you have time, you can marinate this mixture at room temperature for 30 minutes.)

    Cook the pasta al dente, drain it, and return it to the pan.

    Stir in the tomato mixture and adjust the seasonings, adding more olive oil, too, if you like.

    Pour the pasta into serving bowls while still warm and top with the fresh mozzarella.

    Let the cheese settle in and melt a bit, top each serving with a little basil, and serve.
