  • 8 - 10 fresh Roma tomatoes, chopped
  • 1/4 tsp. salt
  • Fresh basil leaves, torn into pieces
  • 2 cloves garlic, pressed
  • 1/2 cup olive oil
  • 1 lb. Fusilli or spiral shaped pasta
  • grated Romano cheese

Directions

    At least an hour ahead, combine the first five ingredients and refrigerate.

    Can be done the day ahead to allow the flavors to blend.

    To serve:

    Cook pasta according to directions until al dente. Drain.

    Toss with cold tomato mixture.

    Top with grated cheese. Serve immediately.
