Summer Rice Salad

Ingredients

  • 1 c. long grain brown rice
  • 1 c. Wehani rice
  • 4 c. water
  • 1 can white beans
  • 1 bunch broccoli rabe
  • 2 lemons
  • olive oil to saute
  • 1 c. fresh parsley, minced
  • fresh black pepper to taste

Directions

    Cook brown and Wehani rice in pot.

    In skillet or wok, saute broccoli rabe, beans and parsley in olive oil.

    When rice is done, pour over juice of two lemons and let cool.

    Mix sauteed mixture with rice and chill.
  5. 5
    Season to taste with black pepper.
