Summer Rice Salad

Ingredients
- 1 c. long grain brown rice
- 1 c. Wehani rice
- 4 c. water
- 1 can white beans
- 1 bunch broccoli rabe
- 2 lemons
- olive oil to saute
- 1 c. fresh parsley, minced
- fresh black pepper to taste
Directions

1Cook brown and Wehani rice in pot.

2In skillet or wok, saute broccoli rabe, beans and parsley in olive oil.

3When rice is done, pour over juice of two lemons and let cool.

4Mix sauteed mixture with rice and chill.

5Season to taste with black pepper.
