- 3 tablespoons olive oil, extra-virgin
- 1/4 cup onions diced
- 1 tablespoon garlic chopped
- 1 1/2 pounds tomatoes vine-ripened, peeled, chopped
- 1/2 teaspoon salt
- 13 cup basil fresh, chopped
- 1/4 teaspoon white pepper
- 4 tablespoons parmesan, parmigiano-reggiano cheese, grated grated
- 8 ounces spaghetti
Directions

1Heat a large pot of water for cooking pasta.

2Meanwhile, put oil and onions in a 2 to 3 quart saucepan over medium heat and cover.

3Simmer onions until soft, but not brown.

4Add garlic and cook for 2 minutes uncovered without browning.

5Stir in tomatoes, basil, salt and pepper.

6Turn to high heat.

7When sauce begins to bubble, remove from heat and cover.

8Cook pasta al dente and drain (but not too dry) and return pasta to pot.

9Add a little sauce and 2 Tablespoons of grated cheese.

10Mix well.

11Turn out onto serving platter.

12Add more sauce and remaining cheese.

13Serve immediately.
