- 1/3 c. Parmesan cheese
- 1 small tomato, peeled, diced and drained
- 1 small green pepper, diced
Directions

1Cook squash until barely tender, cool slightly.

2Scoop out centers, leaving a shell.

3Mix scooped out squash and mix with remaining ingredients.
