  • 6 small summer squash
  • 1/3 c. mayonnaise
  • 1/3 c. Parmesan cheese
  • 1 small tomato, peeled, diced and drained
  • 1 small green pepper, diced

Directions

    Cook squash until barely tender, cool slightly.

    Scoop out centers, leaving a shell.

    Mix scooped out squash and mix with remaining ingredients.

    Stuff the shells.

    Bake at 350° until heated.
