Summer Squash Casserole

Ingredients
- 2 lb. summer squash, sliced
- 1 c. shredded carrots
- 1/4 c. chopped onion
- 1 c. sour cream
- 1 can cream of chicken soup
- 1 (8 oz.) pkg. herbed stuffing mix (not cubes)
- 1/4 c. melted margarine
Directions

1Boil squash and onion for 5 minutes.

2Add carrots, sour cream and soup to squash and onion mixture.

3Set aside.

4Mix margarine and stuffing.

5Spread 1/2 of stuffing mix in bottom of 13 x 9-inch pan.

6Put squash mixture on top of stuffing.

7Sprinkle rest of stuffing mixture on top.

8Cover and bake for 25 minutes at 350°. Remove cover to brown for the last 5 minutes.
