Summer Squash Casserole

- 16 medium squash, sliced
- 1 medium onion, sliced
- 3 Tbsp. butter
- 3/4 c. sour cream
- 1 1/2 c. grated Cheddar cheese
- 1 tsp. salt
- 1/8 tsp. paprika
- 2 egg yolks, beaten
- 3 Tbsp. chopped chives
- 1/2 c. crumbled bacon
- bread crumbs
Directions

1Saute onion in butter, add squash.

2Simmer until tender. Drain and add sour cream, cheese and salt, stirring over low heat until cheese melts.

3Remove from heat.

4Add beaten egg yolks, chives and bacon.

5Pour into greased casserole dish.

6Cover with bread crumbs.

7Brown at 350° for 30 minutes.

8Makes 8 to 10 servings.
