Summer Squash Casserole

- 1 1/4 lb. yellow squash
- 1 large onion, chopped
- 6 Tbsp. butter
- 2 c. Cheddar cheese
- 1/2 c. soft bread crumbs
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 eggs, beaten
Directions

1Wash and cook squash 3 to 4 minutes in boiling water and cool. Saute onion in 4 tablespoons butter.

2Add squash, cut into cubes. Add seasoning.

3Mix eggs, then cheese.

4Spoon into casserole pan. Dab with remaining butter.

5Sprinkle with bread crumbs.

6Bake at 350° for 30 to 40 minutes.
