  • 2 cups yellow squash
  • 1 zucchini
  • 12 lb mushroom
  • 1 onion
  • 2 tablespoons olive oil
  • 2 cups cheese
  • 10 34 ounces mushroom soup
  • 12 cup sour cream
  • 12 teaspoon salt
  • 1 cup cracker
  • 1 tablespoon butter

Directions

    Thinly slice yellow squash and zucchin.

    Wash and slice mushrooms.

    Slice onion.

    In sauce pan add olive oil and saute all above.

    DRAIN.

    Combine vegetables , 2 cups grated cheese, 1 can mushroom soup, 1/2 cup sour cream and 1/2 teaspoon salt.

    Grease a casserole and add all.

    Crush crackers like ritz and mix in 1 tablespoon butter.

    Put on top of vegetables.

    Bake 25-30 minutes in 350 degree oven.
