Summertime Squash

Ingredients
- 2 lb. squash, sliced, boiled and drained
- 1 large onion, chopped fine
- 1/4 c. bell pepper, chopped fine
- 1 1/2 c. crushed herb croutons
- 1 can cream of chicken soup
- 8 oz. sour cream
- 8 oz. grated sharp Cheddar cheese
- 1 stick margarine
Directions

1Boil and drain squash.

2Mix onion, bell pepper, soup and sour cream in squash.

3Melt margarine and add croutons.

4Mix in squash mixture with 1/2 of cheese. Add salt, pepper and garlic powder to taste.

5Pour into casserole dish.

6Top with remainder of cheese. Melt a little more margarine and toss 1 cup croutons and put on top of cheese.

7Bake at 350° for 30 to 40 minutes.

8(Can be frozen before or after baking.)
