  • 1 Garlic Scape, Chopped
  • 1/4 cups Onion, Diced
  • 2 Tablespoons Fresh Ginger Chopped
  • 1 Red Potato, Chopped
  • 1 Red Pepper Chopped
  • 3 Tablespoons Olive Oil
  • 3 Tilapia Fillets
  • 1 bunch Pak Choi
  • 4 leaves Kale
  • Salt And Pepper, to taste

Directions

    Chop garlic, onion, ginger and potato.

    Julienne the red pepper.

    On low, heat olive oil in a large skillet.

    Add the garlic, onion, ginger, potato and red pepper and saute on medium heat for 4 minutes.

    Add the tilapia fillets.

    Fry for 10 minutes uncovered.

    Turn fish over.

    Cut pak choi and kale into strips.

    Add to the pan and cover, cooking another 4 minutes or until fish is flaky.

    Add salt and pepper to taste.
