- 1 doz. eggs
- 1 onion, chopped
- 3 Tbsp. butter
- 4 to 6 medium potatoes, diced
- 1 lb. sausage, browned and crumbled, or bacon or ham
- 1 c. cheese, grated
Directions

1Brown onion in butter.

2Add potatoes to onion; cook until tender.

3Layer, in greased 9 x 13-inch pan, potatoes, onion and meat.

4Mix eggs as if you were going to scramble them.

5Pour over mixture.

6Bake, uncovered, in a 300° oven for 30 minutes.

7Stir every 5 to 10 minutes so it cooks evenly.

8Top with cheese the last 5 minutes.
