Sunflower Soda Bread

- 2 1/2 c. flour
- 1 c. whole wheat flour
- 1 c. yellow cornmeal
- 1/2 c. unsalted sunflower seeds
- 1/3 c. sugar
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 c. buttermilk
- 1 large egg
Directions

1In a large bowl, mix flour, whole wheat flour, cornmeal, sunflower seeds, sugar, baking powder, soda and salt.

2Add buttermilk and egg; beat until dough is thoroughly moistened and stretchy, about 2 minutes.

3Spoon dough in 2 equal mounds, each on center of a 10 x 15-inch pan.

4With floured hands, pat each portion into an 8-inch round.

5With a floured sharp knife, cut a 1/2-inch deep cross on top of each round.

6Bake in a 375° oven until golden brown, 25 to 30 minutes.

7Switch pan positions after 15 minutes. Serve warm or cool; cut into wedges.

8To store, wrap airtight when cool.

9Hold at room temperature up until next day, or freeze. Makes 2 loaves, each about 1 1/3 pounds.
