Sunset Salad

Ingredients

  • 1 (3 oz.) pkg. orange Jell-O
  • 1/2 tsp. salt
  • 1 c. boiling water
  • 3/4 c. pineapple juice and water
  • 1 (14 oz.) can crushed pineapple
  • 1 Tbsp. lemon juice
  • 1 1/2 c. coarsely grated carrots
  • 1/4 c. chopped pecans (optional)

Directions

    Dissolve Jell-O and salt in boiling water.

    Drain pineapple and add water to juice to make 3/4 cup.

    Add to Jell-O.

    Fold in carrots, pineapple (and nuts, if desired).

    Chill until firm. Unmold.

    Garnish with additional pineapple and carrot curls, if desired.
