Ingredients
- 14 lb cubed ham
- 6 eggs
- 14 cup cooked glazed carrot
- 12 small diced onion
- 14 cup cooked bell pepper
- 12 cup cubed cheese
- 14 cup salsa
Directions

1spray pan with cooking oil or use pat of butter.

2toss in all cooked veggies and ham on med heat to warm through.

3add in eggs.

4let cook for 1 minute then break open yolk.

5continue to cook til almost done.

6use spatuala to flip over eggs and combine with veggie ham mix.

7add pepper to taste ( salt is in ham).

8pour salsa over top of eggs once on platter.

9serve on a nice platter with toast and jelly.

10** cook time is determined by how you like your eggs.

11DH likes his cooked with no goopy spots.
