- 1 cup sliced celery
- 3/4 cup sliced green onions
- 3/4 cup chopped green pepper
- 2 tbsp olive oil
- 2 3/4 cup chicken broth
- 1/4 to 1/2 teaspoon salt or to taste
- 1/8 tsp pepper or to taste
- 1 tsp poultry seasoning
- 1 1/2 cup uncooked long grain rice
- 1/4 cup chopped pecans, toasted
Directions

1Saute' celery, green onions, and green pepper in hot 9 IL in a large nonstick skillet over medium high heat until vegetables are crisp tender.

2Stir in broth and seasonings.

3Bring to a boil.

4Spoon rice into a shallow 2 quart baking dish.

5Add hot broth mixture.

6Cover and bake at 350 for 30 minutes or until rice is tender and liquid is absorbed.

7Sprinkle with pecans.
