Super Eggplant Casserole

Ingredients

  • 1 large or 2 small eggplants, peeled
  • 1/4 c. butter
  • 1/4 chopped onion
  • 2 medium tomatoes, peeled and diced
  • 1 lb. ground meat (lean)
  • 1 c. cooked rice
  • 1 tsp. seasoned salt
  • 1/2 tsp. sweet basil, crumbled
  • 1/4 c. shredded Cheddar cheese

    Cut up eggplant into 1-inch square pieces.

    Parboil about 5 minutes.

    Drain and set aside.

    Melt butter in skillet over medium heat.

    Add onion, meat and tomatoes and saute about 5 minutes or until tender.

    Add meat mixture plus cooked rice and seasonings to eggplant and mix well.

    Spoon mixture into buttered casserole dish and sprinkle with cheese.

    Bake at 350° for 30 to 40 minutes or until the cheese is melted and eggplant is tender.
