Super Eggplant Casserole

- 1 large or 2 small eggplants, peeled
- 1/4 c. butter
- 1/4 chopped onion
- 2 medium tomatoes, peeled and diced
- 1 lb. ground meat (lean)
- 1 c. cooked rice
- 1 tsp. seasoned salt
- 1/2 tsp. sweet basil, crumbled
- 1/4 c. shredded Cheddar cheese
Directions

1Cut up eggplant into 1-inch square pieces.

2Parboil about 5 minutes.

3Drain and set aside.

4Melt butter in skillet over medium heat.

5Add onion, meat and tomatoes and saute about 5 minutes or until tender.

6Add meat mixture plus cooked rice and seasonings to eggplant and mix well.

7Spoon mixture into buttered casserole dish and sprinkle with cheese.

8Bake at 350° for 30 to 40 minutes or until the cheese is melted and eggplant is tender.
