Super Mexican Dip

Ingredients

  • 1 Tbsp. vegetable oil
  • 1 1/2 lb. ground beef
  • 1 1/2 large onions, chopped
  • salt and pepper
  • 1 (16 oz.) can refried beans
  • 1 (7 oz.) can diced green chiles, drained
  • 1 (7 oz.) fresh salsa, drained
  • 2 c. shredded Cheddar cheese
  • sour cream
  • chopped black olives
  • chopped green onions

Directions

    Heat oil in heavy skillet over medium heat.

    Add beef and onions.

    Cook until beef is brown, breaking up beef with fork, about 5 minutes.

    Drain.

    Season with salt and pepper.

    Spoon half of the beans into a 9 x 13-inch glass baking dish.

    Top with half the beef mixture, 1/2 chiles, 1/2 salsa and 1/2 Cheddar cheese. Repeat remaining ingredients.

    Can be prepared 1 day ahead, covered and chilled.

    Bake at 350° until heated through and cheese melts, about 30 minutes.

    Top with sour cream, green onions and olives. Serve with chips.
