- 12 cup quinoa
- 1 cup yellow cornmeal
- 1 cup unbleached all-purpose flour
- 12 cup sugar
- 1 tablespoon baking powder
- 1 12 teaspoons salt
- 1 large egg
- 1 cup milk or 1 cup soymilk
- 12 cup oil
Directions

1Preheat oven to 375.

2Lightly grease an 8x8 baking pan or a 12 muffin tin.

3Mix dry ingredients together in a bowl: quinoa, cornmeal, flour, sugar, baking powder, salt.

4Mix wet ingredients in a separate bowl: egg, milk, oil.

5Stir wet ingredients into the dry ingredients until blended.

6Pour into pan or muffin tin.

7Bake pan 20-25 minutes, muffins for 18-20 minutes.

8Cool 10 minutes.
