  • 12 cup quinoa
  • 1 cup yellow cornmeal
  • 1 cup unbleached all-purpose flour
  • 12 cup sugar
  • 1 tablespoon baking powder
  • 1 12 teaspoons salt
  • 1 large egg
  • 1 cup milk or 1 cup soymilk
  • 12 cup oil

    Preheat oven to 375.

    Lightly grease an 8x8 baking pan or a 12 muffin tin.

    Mix dry ingredients together in a bowl: quinoa, cornmeal, flour, sugar, baking powder, salt.
