Ingredients
- 1/2 c. mayonnaise
- 1 tsp. salt
- dash of pepper
- 1 tsp. grated onion (optional)
- 1 c. cooked chicken or other meat, cut in strips
- 6 ripe olives
- 3 ripe tomatoes, wedged
- 1 c. Swiss cheese, cut in strips
- 1/4 c. chopped dill pickle
- 2 c. hot cooked rice
- 1 c. cooked green peas
Directions

1Prepare rice as directed.

2Mix together the salt, mayonnaise and pepper.

3If you like, add 1 teaspoon grated onion to this mixture.

4Add chicken, Swiss cheese, pickle and hot rice.

5It is important that the rice be hot.

6Add peas; mix gently.

7Cover and chill about 1 hour, or for a very different flavor, serve at room temperature.

8Serve on salad greens garnished with tomatoes and olive wedges.
