- 2 1/2 c. flour
- 1 c. salted butter, softened
- 1 c. sugar
- 2 tsp. vanilla extract
- 1 c. fruit jam
- 1/2 tsp. baking powder
- 1 large egg
Directions

1Combine flour and baking powder.

2Mix well and set aside. Cream butter and sugar very well.

3Add egg and vanilla and beat on medium speed until smooth.

4Add flour mixture and blend at low speed until thoroughly combined.

5Dough will be firm.

6Roll tablespoons of dough into 1-inch balls and place on ungreased baking sheet one-inch apart.

7Using small end of melon baller, scoop out the center of the dough balls.

8Do not scoop all the way through the cookies.

9Place 1/2 teaspoon of jam in the center of each dough ball.

10Bake at 300° for 22 to 24 minutes or until golden brown.

11Yields 4 dozen.
