- 1 catfish fillet (not too thick)
- 4 oz. whole crackers (unsalted)
- 6 oz. shelled, skinned roasted peanuts
- 1 Tbsp. honey
- 3/4 c. yellow mustard
- 1 tsp. white vinegar
- 4 Tbsp. butter
Directions

1Preheat oven to 325°.

2Coarsely grind crackers and peanuts together.

3Place in mixing bowl and stir in 2 tablespoons melted butter.

4In separate bowl, mix vinegar, honey and mustard together.

5Take catfish fillet, skin side down, and spread evenly over the fillet the mustard sauce.

6Coat the entire fillet with cracker and peanut crumbs.

7Drizzle remaining 2 tablespoons butter over the crumbs.

8Bake for 20 minutes, covered.

9Finish, uncovered, for 8 to 10 minutes to allow crumbs to brown.

10Best served with mild flavored rice.
