- 2 cups Sushi Rice
- 3 cups Water
- 1/2 cups Rice Vinegar
- 1 Tablespoon Canola Oil
- 1/4 cups Granulated Sugar
- 1 teaspoon Salt
- 5 Nori Sheets
- Baked Or Pan Fried Tofu Sliced Into Think Strips (optional)
- 1 Cucumber Sliced Into Thin Strips (optional)
- 1 Avocado, Peeled, Pitted And Sliced Into Thin Strips (optional)
- 2 Green Onions Sliced Into Thin Strips (optional)
- 1 Carrots Sliced Into Thin Strips (lightly Sauteed, Optional)
- For Serving: Pickled Ginger, Tamari/soy Sauce Or Wasabi
Directions

1Rinse rice in a colander until the water runs clear.

2Combine rice and water in a rice cooker or a saucepan, and cook according to package instructions for rice cooker or stove top preparation.

3In a small saucepan, combine vinegar, oil, sugar and salt over medium heat, and cook until sugar is dissolved.

4Pour this mixture over the cooked rice, and stir well.

5Let rice cool.

6Lay a sheet of nori on a flat surface.

7Dip your hands in a bowl of cool water to prevent rice from sticking to your hands.

8Using your fingers, spread a layer of rice on top of the nori.

9Make the layer about 1/4 inch thick (adjust to your preference), and leave a one inch wide space along one side of the nori.

10Pile your desired fillings (any from the options above or from the depths of your own clever mind) along the edge on the nori sheet opposite of the one inch space.

11Starting at the end with the fillings, tightly roll your sheet up over the fillings until you have reached the one inch space.

12Lightly wet the empty area of nori with a bit of water, and continue rolling.

13Gently press the wet area of nori to seal the roll.

14If available, use a bamboo mat to stick everything together.

15Using a sharp knife, slice the roll into pieces of your desired thickness.

16Top with and dip into any of the options listed above.

17Note: Tamari is a delicious wheat-free soy sauce.

18You can find powdered wasabi at any grocery store.
