Swedish Cod Chowder

- 3 large potatoes
- 1 large onion, sliced
- 1/4 c. margarine or butter
- 1 1/2 tsp. salt or to taste
- 1/4 tsp. pepper
- 1 small bay leaf
- 1 c. hot water
- 3 c. milk
- 1 (1 lb.) cod fillet (good), cut into 1 1/2-inch cubes
- 2 tsp. minced fresh dill or 2 tsp. dried dill weed
Directions

1In Dutch oven over medium heat, cook spuds and onion in butter, stirring occasionally, 10 minutes.

2Stir in salt, pepper, bay leaf and water.

3Cover and simmer 10 minutes.

4Add milk and fish; bring just to boil.

5Reduce heat and cover.

6Simmer very gently for 15 minutes or until fish flakes easily with fork. Sprinkle with dill weed (optional).
