Swedish Rice Pudding

  • 3/4 c. rice
  • 3 c. scalded milk
  • 1/2 c. sugar
  • 2 eggs, slightly beaten
  • pinch of salt
  • 1 Tbsp. butter, melted
  • 3 crushed cardamon seeds
  • cinnamon (for top)

Directions

    Cook rice in salted water. Drain dry. Add milk, sugar, eggs, salt cardamon seed and butter.

    Pour into casserole and sprinkle cinnamon over the top. Bake at 400° until firm.
