  • 2/3 pound vermicelli
  • 2 1/8 cups milk
  • 7/8 cup cream
  • 2 teaspoons cornstarch
  • 6 egg yolks
  • 1 lemon peel
  • 1 cinnamon stick
  • 3 orange blossoms
  • 1 1/2 cups sugar
  • 2 teaspoons honey
  • 7 1/4 tablespoons ground almonds coarsely

Directions

    Bring a pot with water and some rock salt to a boil.

    Break the pasta in half, and add to the boiling water.

    Boil for 3 to 4 minutes, then drain well. Rinse in cold water, and set aside.

    In a saucepan, mix the milk, cream, cornstarch, egg yolks, lemon peel, cinnamon stick, orange flowers, sugar, honey, and crushed almonds.

    Mix well, and bring to a boil, stirring constantly.

    When hot, add the vermicelli, and continue cooking, stirring until sauce thickens slightly.
