Ingredients

  • 1 (20 oz.) can pineapple chunks, drained (reserve syrup)
  • 1 green pepper, cut into 1-inch pieces
  • 2 carrots, cut diagonally into thin strips
  • 1 clove garlic, finely chopped
  • 1 tsp. salt
  • 1/2 c. vinegar
  • 1/2 c. brown sugar
  • 2 Tbsp. cold water
  • soy sauce to taste

Directions

    In a 1-cup measuring cup, add enough water to reserved juice to measure full cup.

    In medium saucepan, heat juice and water, adding brown sugar, vinegar, carrots, soy sauce and salt.

    Stir. Add garlic; bring to boil.

    Reduce heat, cover and simmer about 6 minutes.

    Mix water and cornstarch; stir into sauce.

    Add pineapple, your choice of meat and green pepper.

    Boil 1 minute, stirring constantly.
