- 1 1/2 c. sifted flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- pinch of salt
- 4 tsp. sugar
- 2 eggs
- 6 to 8 Tbsp. milk
- 1/2 c. whole kernel corn
- 1/2 c. creamed corn
- sufficient oil for frying
Directions

1Sift together first 5 ingredients. Beat eggs in a medium size bowl until frothy.

2Add 6 tablespoons milk and all dry ingredients.

3Stir and add whole kernel and creamed corn.

4Batter should resemble thick pancake batter.

5If too thick, beat in 1 or 2 tablespoons more of milk until desired consistency is reached. Drop by heaping tablespoonfuls into deep oil (oil must be hot). Brown in about 2 minutes on both sides.
