Sweet Corn Soup

Ingredients

  • 4 ears sweet corn, kernels cut off cobs
  • 8 ounces bacon, diced
  • 2 large yellow onions, chopped
  • 3 garlic cloves, minced
  • 14 teaspoon red pepper flakes
  • 14 ounces chicken broth
  • 1 pint heavy cream
  • salt and pepper, to taste

Directions

    In 5qt Dutch oven, saute diced bacon until crisp; about 8 minutes.

    Discard all but 2 T grease from pot.

    Add chopped onion and simmer until soft and translucent; about 7 minutes.

    Add corn kernels, garlic, red pepper flakes and cook, stirring occasionally until softened; about 15 minutes.

    Using food processor, blend corn mixture in batches untill smooth.

    Return corn mixture to pot; stir in chicken broth and simmer about 20 minutes.

    Stir in cream, adjust seasonings with salt and pepper.

    Simmer approximately 10 minutes.

    Ladle soup into warm bowls and garnish with bacon, if desired.
