Sweet Corn Soup

- 4 ears sweet corn, kernels cut off cobs
- 8 ounces bacon, diced
- 2 large yellow onions, chopped
- 3 garlic cloves, minced
- 14 teaspoon red pepper flakes
- 14 ounces chicken broth
- 1 pint heavy cream
- salt and pepper, to taste
Directions

1In 5qt Dutch oven, saute diced bacon until crisp; about 8 minutes.

2Discard all but 2 T grease from pot.

3Add chopped onion and simmer until soft and translucent; about 7 minutes.

4Add corn kernels, garlic, red pepper flakes and cook, stirring occasionally until softened; about 15 minutes.

5Using food processor, blend corn mixture in batches untill smooth.

6Return corn mixture to pot; stir in chicken broth and simmer about 20 minutes.

7Stir in cream, adjust seasonings with salt and pepper.

8Simmer approximately 10 minutes.

9Ladle soup into warm bowls and garnish with bacon, if desired.
