- 12 cup sugar
- 34 cup divided water
- 1 lb cut into 1/2-inch cubes boneless pork loin
- 1 tablespoon preferably dark soy sauce soy sauce
- 1 tablespoon vegetable oil
- 4 thinly sliced shallots
- 2 tablespoons of premium fish sauce
Directions

1PLACE sugar and 1/4 cup of the water in medium skillet on medium-high heat.

2Cook and stir 6 to 8 minutes or until sryup is light golden brown.

3Be careful that it does not burn.

4ADD pork; stir to coat with the syrup.

5Stir in remaining 1/2 cup water, fish sauce and soy sauce.

6Reduce heat to low; simmer 20 to 25 minutes or until pork is cooked through and liquid is reduced to a light syrup.

7MEANWHILE, heat oil in skillet on medium heat.

8Add shallots; fry until golden brown and crisp.

9Drain on paper towels.

10Serve pork topped with crisp shallots.
