  • 3 Tbsp. butter or margarine
  • 3/4 tsp. salt
  • 1/4 c. orange juice
  • 3 c. cooked mashed sweet potatoes
  • 1 (9 oz.) can crushed pineapple, drained (1 c.)
  • 1 Tbsp. butter or margarine
  • 6 marshmallows, cut in halves

Directions

    Add 3 tablespoons butter, salt and orange juice to sweet potatoes.

    Beat until light.

    Fold in pineapple.

    Spoon potato mixture into a 1-quart casserole.

    Dot with 1 tablespoon butter. Put marshmallows on top.

    Bake in moderate oven at 350° until marshmallows are puffed and browned.
