- 3 lb. sweet potatoes, peeled and cubed
- 1 large egg
- 3/4 c. brown sugar
- 1/2 c. oleo, melted
- 1 tsp. salt
- 1 tsp. cinnamon
- 1/2 c. orange juice
- 1/2 c. pecan halves
Directions

1Bring potatoes to a boil.

2Simmer 15 to 20 minutes or until soft and drain.

3In large bowl, beat potatoes with mixer until smooth.

4Add beaten eggs, 1/4 cup of the brown sugar, 1/4 cup of the oleo, salt and cinnamon.

5Add orange juice slowly and beat until fluffy.

6Scrape potatoes into large dish and smooth surface. Arrange pecans on top.

7Sprinkle remaining 1/2 cup of sugar over pecans.

8Drizzle top with remaining 1/4 cup of oleo (melted). Bake at 325° for 25 to 30 minutes or until bubbly.
