  • 2 1/2 c. sifted all-purpose flour
  • 1 1/2 c. sugar
  • 3 1/2 tsp. baking powder
  • 1 tsp. salt
  • 3/4 c. milk
  • 1 tsp. vanilla
  • 1/2 c. walnuts, very finely chopped
  • 4 egg whites
  • 18 maraschino cherries, well drained and chopped fine
  • 1/2 c. shortening
  • 1/4 c. maraschino cherry juice
  • 2 tsp. almond extract

    Sift dry ingredients into a large mixing bowl.

    Cut in shortening.

    Combine milk and cherry juice, then add 3/4 cup (save balance for later).

    Add flavorings.

    Beat 2 minutes on low speed, or 200 strokes by hand.

    Add remaining liquids and egg whites. Beat 2 minutes more.

    Blend in nuts and cherries.

    Bake in 2 layer pans in a 375° oven for 20 to 25 minutes.

    Frost with cherry frosting mix.
