  • 85 g butter
  • 85 g caster sugar
  • 1 teaspoon vanilla essence
  • 1 egg
  • 140 g self-raising flour
  • 1 pinch salt
  • food coloring

Directions

    Pre-heat oven to 180c/gas 6.

    Put 12 paper cases in a baking tray.

    Beat butter and sugar until light and fluffy.

    Add the egg and mix in well.

    Fold in the flour and salt with a spoon.

    Add vanilla essence.

    Add a few drops of food colouring and swirl round with a knife.

    Spoon mixture into paper cases and bake for 15 mins Ice if you want to, using icing sugar and lemon juice.

    Sprinkle with 100s and 1000s.
