- 2 c. shredded Swiss cheese (about 8 oz.)
- 2 sticks butter, softened (1/2 lb.)
- 3/4 c. flour
- 1/2 tsp. freshly ground pepper
- 1/4 tsp. cayenne
- 1 egg white, beaten
- 2 Tbsp. grated Parmesan cheese
Directions

1Preheat oven to 425°.

2In a food processor, combine Swiss cheese, butter, flour, pepper and cayenne.

3Process until well blended.

4On a flat work surface, roll out dough 1/4 inch thick and cut into desired shapes.

5Brush with beaten egg white and sprinkle with Parmesan cheese.

6Transfer to a baking sheet.

7Bake until biscuits are lightly browned, about 15 minutes.
