- Swiss chard for four
- 4 or more slices bacon
- 1/3 C. vinegar
- 2 eggs
- 2 Tbsp. milk
- onion to taste
Directions

1Wash chard; slit lengthwise and chop.

2Bring a pan of water to a boil; cook chard; drain.

3Fry bacon; reserve 2 Tbsp. fat. Crumble bacon, set aside.

4Dice onion; set aside.

5Beat eggs with 2 Tbsp. milk.

6Weaken vinegar with water to make 1/2 C. Add to egg mixture and cook till thickened.

7Add chard, crumbled bacon, and raw onion.

8Serve at once.
